Tea is considered the most important drink in the world after water; the history of tea dates back to approximately 5,000 years ago in China. This drink was initially used in medicine due to its therapeutic properties. The most important ingredients in tea include caffeine, which calms the nerves, relieves fatigue and drowsiness. Catechin is another substance that is anti-cancer, reduces blood lipids and is antiviral. Another substance is tannins, which are a type of chemical compound belonging to a larger group of compounds called polyphenols and antioxidants that act as a defense system against pests. Also, tannins are effective factors in creating the color, taste and aroma of tea. The following are among the properties of polyphenols.

Tea is tied to the culture of nations. In some countries, tea has become a special culture and drinking it has special customs; one example is the tea ceremony in China, which is held with special customs to cultivate and calm the soul and purify the mind. In Japan, holding a tea ceremony shows the highest respect for the guest and is held in a special room. In England, royal families hold afternoon tea ceremonies with special customs. In Iran, tea is also used in various ceremonies, including two-color tea in the marriage ceremony.
History of tea in Iran
In Iran, like in other Islamic and European countries, tea consumption has a long history. Tea in Iran became a widespread drink and replaced coffee in the late Qajar period. Tea cultivation in Iran began in 1314 AH by Mohammad Mirza Kashif al-Saltanah in Lahijan.
Tea growing regions in the world
The major tea producing countries in the world include China, India, Kenya, and Sri Lanka. Among them, tea produced in the Assam region of India and Sri Lanka, known as Calcutta and Ceylon tea in the Iranian market, is very popular.
